Cheese Salsa Baskets
Very similar to the Tuiles we made in a previous recipe, these little cheese and salsa baskets are great to serve as a starter or side dish and are wonderful with a summer salad.

Ingredients
- Parmesan (or any hard cheese)
- Salsa
Instructions
- Preheat your oven to 180°C.
- Line a baking tray with greaseproof paper and place a medium/large cookie cutter on top of the paper.
- Fill the bottom of the cookie cutter with the grated cheese, then remove the cutter. You can now repeat the process to create a few rounds of the cheese.
- Place the tray in the oven and bake for around 4 minutes. Keeping an eye on them, they will be ready when they are slightly golden and bubbling.
- Remove the tray from the oven, then move the paper with the cheese on to a cutting board.
- After about 10 seconds of cooling, using a palette knife, remove the cheese rounds.
- Place each of the cheese rounds whilst hot/warm between 2 fluted baking molds, or place the rounds on top of some upturned shot glasses.
- Apply a little pressure for about 1 minute to each, then leave to cool/harden.
- Once cold you can remove from the molds/glasses and fill each basket with a few teaspoons of the salsa and serve.
