Ingredients
- 320 g shortcrust pastry chilled
- 300 g pecan halves
- 4 eggs
- 75 g maple syrup
- 300 g light corn syrup
- ½ tsp fine sea salt
- 190 g dark brown sugar
- 1 tbsp vanilla extract
- 55 g unsalted butter melted
- 1 tsp self-raising flour
- icing sugar
Instructions
- You will need a 9” tart pan with a removable base.
- Dust your surface with icing sugar, then roll out your pastry and cut it 1” larger than the tart pan.
- Lightly roll the pastry around a rolling pin. Unroll on top of your tart ring or pan and with your hands gently press dough into pan. Then use a knife to remove any excess pastry.
- Prick the bottom of the pastry with a fork (this will prevent the dough from puffing up as it bakes). Cover and refrigerate for about 30 minutes to chill the pastry.
- Preheat oven 180°C.
- In a medium-size bowl, whisk together 3 of the eggs – then add maple syrup, light corn syrup, salt, dark brown sugar, vanilla extract, flour and stream in melted unsalted butter. Whisk together until thoroughly combined.
- In small bowl whisk the left over egg, then using a pastry brush glaze the pie base with the egg.
- Roughly chop 200g of the pecans, place the chopped pecans onto the pie base and pour the filling to fill over the top.
- Arrange the unchopped pecans on top of the pie for decor.
- Place in the oven and bake for 40-50 minutes, or until pie has set.
- Remove from the oven and leave to cool completely before serving., with whipped cream or ice-cream – the choice is yours!
