Pastry Bacon Wraps
A twist on that favourite many choose when going to a particular bakery chain, that is much tastier than shop brought ones.
Ingredients
- 320 g Ready-rolled Puff Pastry
- 12 slices Streaky Bacon
- 6 tsp Pesto
- 1 medium Egg (to glaze)
- 100 g Grated Cheese (mozzarella, monterey jack, gruyere or gouda, are all good choices for this recipe)
Instructions
- Preheat oven 180°C.
- Line a baking tray with baking paper.
- Roll out your puff pastry and cut into 6 squares.
- Put a teaspoon of pesto on to the middle of each square and, using the back of your spoon, spread diagonally (top right corner to bottom left) on each square.
- Lay 2 slices of bacon on each square, on top of the pesto.
- Now, sprinkle each square with the cheese, on top of the bacon.
- In a small bowl whisk your egg, this will be used as our glaze.
- Fold the edges without pesto over the top of the filling and seal the top edge with some beaten egg.
- Move the wraps to your prepared baking tray and, using a pastry brush, glaze each of the pastries.
- Bake on a high shelf in the oven for 20-25 minutes, or until the pastry is golden.
- Remove from the oven and leave to cool for 2 minutes in the tin, before transferring the tarts to a wire rack to cool.
Notes
Tip: If you want to add some more flavour to the ingredients, you could always some sundried tomato to the filling and give it that extra ‘bite’.
