These are something of a favourite that many choose when going to a particular bakery chain. Little do you know that these are so easy make at home! So here is a twist on that recipe, that is much tastier than shop brought ones – why? Because you have the satisfaction of making them yourself…

A twist on that favourite many choose when going to a particular bakery chain, that is much tastier than shop brought ones.

Ingredients
  

  • 320 g Ready-rolled Puff Pastry
  • 12 slices Streaky Bacon
  • 6 tsp Pesto
  • 1 medium Egg (to glaze)
  • 100 g Grated Cheese (mozzarella, monterey jack, gruyere or gouda, are all good choices for this recipe)

Instructions
 

  • Preheat oven 180°C.
  • Line a baking tray with baking paper.
  • Roll out your puff pastry and cut into 6 squares.
  • Put a teaspoon of pesto on to the middle of each square and, using the back of your spoon, spread diagonally (top right corner to bottom left) on each square.
  • Lay 2 slices of bacon on each square, on top of the pesto.
  • Now, sprinkle each square with the cheese, on top of the bacon.
  • In a small bowl whisk your egg, this will be used as our glaze.
  • Fold the edges without pesto over the top of the filling and seal the top edge with some beaten egg.
  • Move the wraps to your prepared baking tray and, using a pastry brush, glaze each of the pastries.
  • Bake on a high shelf in the oven for 20-25 minutes, or until the pastry is golden.
  • Remove from the oven and leave to cool for 2 minutes in the tin, before transferring the tarts to a wire rack to cool.

Notes

Tip: If you want to add some more flavour to the ingredients, you could always some sundried tomato to the filling and give it that extra ‘bite’.
